[Kitchen insider]: How to get that filter coffee right

Filter coffee or "kaapi" is south India's answer to cappuccino. The foam isn't the result of a whirring machine but an organic exercise. It takes a little longer to prepare than instant coffee but drinking it, poured in and out of a steel glass, from a height, is a treasured experience.
