He&amp;rsquo;s been with the house for 27 years and you will forgive him for his emotional attachment to the Benedictine monk who was born three centuries ago. The monk and cellar master at the Benedictine abbey in Hautvillers pioneered a number of winemaking techniques around 1670 which improved the quality of wines and led to the eventual development of sparkling wines as the main style of production in France&amp;rsquo;s Champagne district. Geoffroy believes drinking Dom is all about emotion, memory and being &amp;ldquo;in the moment&amp;rdquo;. Always a vintage Champagne, which means it is not made in the weak years, the amiable and expansive Geoffroy, who is as much in charge of the winemaking as he is of its consumption, says there is no &amp;ldquo;correct&amp;rdquo; way to drink it.
