Happiness has many expressions.
From May 23, 2019, onwards, the motichoor cake will be one of them.
This saffron cake became one of the most trending things on the eve of the election results, courtesy the Delhi BJP leaders. The special 7-kg cake went viral because it just seems so perfect: Desi Laddoo is its heart and saffron is on the sleeves.
What we found out though is that it can be made in your kitchen quite easily if you are a baking enthusiast. The things in addition to the usual baking kit which you will need are a helluva lot of motichoor boondi, which you get by lightly crushing store-bought motichoor laddoos.
Combine malai, sugar, curd, lemon juice in a bowl and whisk. (You can use milk or Milkmaid and do away with curd and lemon, according to how you generally make cakes.)

Combine plain flour, elaichi (cardamom) powder, baking powder and baking soda plus salt.
Mix both, folding gently. (The batter should have a pouring consistency).
Add any essence of your choice — rose, vanilla, whatever you like.
Pour the batter into a greased tin and make the cake the way you do.
You can also add tutti-fruiti or pistachios
Once the cake is made, move to the more crucial part.
Make a sugar syrup with cardamom powder.
Whip cream with powdered sugar.
Take out the cake and cut into two horizontal layers. Add cream to the plate where the cake will be placed. Place the first half. Sprinkle sugar syrup, cream and press the second half onto it. Cover the entire cake with cream. Let it set in the refrigerator for 10 minutes.
Then, lightly press motichoor boondis on every side of the cake.
If you are a dressing expert, you can also make roses on the surface, like in the BJP one. Then, you can place laddoos (whole ones) on the top. Because victory, you see, can never be too sweet!
