The triple Michelin Star-holder Chef is a passionate presence, bustling about his restaurant and his gallery wielding colour pencils, and ladles with equal ease.&lt;/p&gt;&lt;p id='p_2'&gt;Chef Passard, who has been cooking vegetarian food since 2001, stopped using meats having got turned off its smell, sight, feel and taste. After the almost spiritual experience he has dedicated himself to the colours and tastes of parsnips, tomatoes, carrots, and the whole vegetable world. As he prepares to come to India in November he talks about his Indian guests who love how his vegetables taste so different. He is looking forward to cooking in South India where he says the food is so sophisticated.&lt;/p&gt;
